My seagoing career has included both 10 years within the Royal New Zealand Navy and just less than 2 years with Pacific Basin Shipping.

Pacific Basin Sea Tow (NZ) Ltd Ship's Cook

•Served a successful tenure onboard M.V. PB Gibson (34.1m), trading from Australia, New Caledonia to Singapore.

•Commended on raising standards, with a focus on improving the variety in menus and exceeding expectations.

•Instigated a new stock ordering system with excellent results.

•Excelled in a position which demanded a flexible and hard working team leader.

Feb 1979 to Feb 1989

Royal New Zealand Navy Ship's Cook

•Served onboard frigates, successfully catering for 250 crew. Seconded for official governmental functions ashore.

•Deemed to be 'well-groomed and sober bearing' throughout entire tenure.

•Developed competence in stock control, menu planning, purchasing, costing and staff management.

Nov 2004 to Jun 2007

The Cosmopolitan (Cossie) Club - Upper Hutt, NZ Managing Director / Executive Chef

•Achieved dramatic success through re-building the business into the largest Club in New Zealand, directly increasing the Club's popularity and profitability.

•Ran a thriving 250+ seat function area, 200 seat restaurant and an additional café / bar area.

•Experienced high levels of job satisfaction through running an efficient and productive system that produced high quality food in high volumes.

•Multi-faceted role involving management of 45 staff, cooking and running the kitchen, menu planning and stock control.
