Objective


My name is Francois Booyse.

I am a Financial Management graduate in my second year Catering Management diploma and STCW'95 Basic Safety Training, with extensive catering, hotel / game lodge and hospitality management experience, coupled with international remote, hostile, camp & catering management.

I have recently completed a contract as camp & service (catering) manager in Darfur, Sudan and is therefore available immediately and with all my travel documents still in order I can leave on very short notice should it be required.

Camp & Service - catering - Manager

Construction, maintenance and servicing of military camps to house 400 or more African Union Military Observers and Protection Force units.

Design and installation of water supply, plumbing, septic and electrical systems.

Maintenance and operations of all constructions.

Camp services management regarding hospitality, kitchen management, food & beverage management, camp, kitchen and restaurant hygiene. Setting up of weekly menus and weekly food procurement to be flown in from bigger markets. Managing of sub-contracting kitchen and restaurant staff.

Security OPS of immediate areas. Liaison with African Union Representatives. Planning, executing and installation of security and contingency plans in the camp and immediate areas. Gathering of intelligence.

Financial, administrative and logistical management.

Monthly and quarterly budgets. Administration and recording of Petty Cash (US$ 60 000 per month).

Personnel and salary management. Warehouse and asset control. Procurement of all building material, equipment and food for the base.
